Basic priciple is that the color you see is the color that impinges upon your retina. So Grass is green because it reflects green light to your eye. Dirt looks brown because it reflects that color light to your eye. And the sky looks blue because blue light scatters from the molecules of oxygen in the atmosphere to your eye.

The sky is blue due to an effect called Rayleigh scattering. The atmosphere tends to scatter shorter wavelenghts of light, like blue, while red light is more penetrating. The blue sky is the result of scattered blue light, throughout. This is also why the sun appears more red at sunset. The sunlight has to go through more atmosphere at that angle, so more of the shorter wavelengths are refracted away from your line of sight, leaving mostly red.

Grass is green for the same reason all plants have green pigment. It is due to the presence of chlorophyll. This complex molecule tends to reflect green wavelengths of light, while absorbing others. The actual element in chlorophyll which is responsible for the green tint is magnesium.

Dirt is brown because it's funky.
