My favorite Buffet (for the price) in Las vegas are the following:
Monte Carlo Buffet - here they have a fresh pasta station where they grill your pasta meats and saute everything together right in front of you! They also have a station across from that which does Asian Stir Fry in front of you as well. Plus there's the usual fruit, meats, and good amount of desserts. The price is very reasonable (Lunch ~ 13, Dinner ~ 18-20).
Luxor Buffet - Here the food is very good as well, no fresh made stuff like at Monte Carlo, but the selection is a little bigger - particularly if you get there at lunch when they have a lot of breakfast AND lunch items there. Their dessert selection is larger than the Monte Carlo and it has a good fruit stand. Price is also very good at Lunch ~13, Dinner ~17-19.
Aladdin (now Planet Hollywood) Buffet - This is probably the BEST tasting buffet for its value. They have kabobs, pasta, fresh cotton candy and cakes, great meats, and a wide range of breads and cheeses. The buffet offers very good quality food and you will definately find what you feel like eating. Price is a little higher but very reasonable for the quality of food. Lunch ~ 16-18, Dinner ~ 20-23.
Besides that - I also really love the Bellagio Buffet and Wynn Buffet for higher end buffets which offer all the above mentioned, BUT on a much more gourmet level (particularly the desserts and meats!). These buffets will set you back about ~20-25 for Lunch, ~25-30 for dinner, but the price is WELL worth the great food that really rivals sitdown restaurants.
As far as mid-range priced buffets go - i would say the MGM Grand buffet is a good comprimise between selection, price and quality of food. Very good and still one of my favs. Lunch ~ 17-20, Dinner ~22-26

Rio is the best value for money as there are $5 off coupons everywhere. the selection is also the biggest at the rio.
Orleans and Gold Coast lunch buffets cost just $7.49 and are of a high quality.
The best buffet in Vegas is spice market buffet at Planet Hollywood, it costs approx $20 for lunch.

The Buffet at the Aladdin, which is now Planet Hollywood was great. Don't know how good it is since they changed but it was a nice place downstairs from the casino.
Take a look at Vegas.com and they will link you to lots of info on Vegas. Also look at the travel site info for vegas on Yahoo Travel. Should at least give you other people's opinions.
