How did they dry beans, pinto, lima, kidney etc in the early days without a modern food dehydrater?

Normally, you would pull up the whole plant and hang it up where there's good air flow until the pods are dry. If you have already picked the pods, then the best way is to lay the pods in a single layer somewhere they will get plenty of air. On a wire rack would be the best way, but if you can't do this because you have too many or something, put a few folded kitchen towels underneath, to help prevent damp collecting.

Check them every few days, and turn them over. When the pods are dry and crispy, you can take the beans out and put them away in an air tight container. When you want to boil them, you soak them overnight, and then boil them for at least 10 minutes, as raw kidney beans are poisonous, even after soaking.

you can leave them on the vine and they will dry on their own. This Autumn when the vines and pods are dried and papery then you can harvest the beans. It's how I do it.
