All there is right now is a little fan above the range with a wall switch. In the attic there is no duct work so attic insulation falls through onto our range when it is on. Is there some kind of duct or tubing that I can use and if so, how do I attach it?

Interesting setup. I would seal the attic hole and choose a ventless range hood.

You have two options for venting your kitchen hood. First you could install a duct above the hood that goes outside either through the roof or out the sidewall of your house. Another way is to purchase a vent less hood and just patch your existing hole in the ceiling.

Either way you need to do something because you current installation is a fire hazard. If you get a stove fire then it could spread into your attic not to mention sanitary issues.

You need ducting to the outside of your house. You can get metal, rigid duct sections at most Home Centers. They interlock and you wrap tape around the joints. You will also need the exit piece with a cover (weather cover) over the end. You do not want to be pushing cooking oil up into your attic.
