We're looking for a place that doesn't have a huge occurance of natural disasters (tornadoes, hurricanes, blizzards) and isn't completely flat, but also not up in the mountains.

There is this place called the Midwest. Four seasons, trees and mostly good water. The weather changes; you get use to it.

Rockies on one side, Ohio on the other. North Dakota to the north, Oklahoma to the south. Within that box, you will find what you seek.

Maybe in some place like Wyoming or Montana where cows outnumber people. Anywhere near a semilarge, non disaster prone area, town in Texas anymore, 10 -15 acres will cost you close to that much without the house. Lots of Luck.
