The operative word here is should. I read a book once and one of the keys to happiness was to never take anything personally...
By this it meant neither a compliment nor an insult or anything in between, because the other persons reality is different from your own, they are influenced by factors that you may not even know or see.
So if you live and go about your day based only on your set parameters of right and you remain true to that, then you will truly be content.
My answer is, as an in-perfect human being, yes I care but I should not.

Some what yes. But the older and wiser and more self confident I get, I care less and less. I do not care at all what others think of the way I look, the way I dress. I am insecure about my lack of education and bad grammar. People here are always making fun of me for that. I should have stayed in school.

Nope. Never have and never will. I'm not a people pleaser. I care what I think of me. As long as I'm true to myself and do what I know is right in my heart, try to live a good life, have good ethics, morals and values, and am considerate to others, I'm doing what I know is right. You'll never please everyone and I got too many other things to worry about. Just doing what's right, inspite of any approval or opposition, is what's important to me. I'm not always the most popular person, but I sleep well at night (and I have a tough shell).

Yes. The fact is we all care. Its impossible for us not to care. whether or not we actually want to admit that we care, we would always be acting and behaving (either consciously or sub-consciously) within the material and psychological boundaries of our "context" namely, the social norms and values.
When a person says " i really don't care what others think of me". The word "other" refers to either one person or one particular group of people. The "other" cannot possibly mean 'every other human being' on earth.
If i didn't care what others think of me, I would either not be using yahoo answers or that i could be answering the questions in an extremely confusing manner since i wouldn't be concerned about the 'correctness' of my answers. Btw, A person's ability to think and argue logically has nothing to do with how that person chooses to express him/herself in front of others. I believe that one's choice of expression is related to one's "attitude" not "intelligence.

To a certain point, yes.
For example, I do not care if someone thinks my political views are stupid and meaningless. I also don't care if someone thinks less of me because of the way I look/dress.
However, I do care if someone thinks I am rude, since I try not to be. I also care if someone thinks I'm mean for the same reason.
I also care what my friends/family think of me since they are my friends/family.

Care? Yes. Obsess? No.
Consider what a valuable commentary on our internal judgments an outsider's opinion is.
It is of the same quality as proving you can jump 10 feet by trying to actually jump 10 feet. The trying and the failing or succeeding is the same sort of commentary by an outside world, one we do not control, on our internal guesses.
So, acknowledging and listening to another's comments and thoughts about ourselves is of real value. It isn't the only voice in the court, but it is an important one anyhow.

That is the curse of age.
The younger you are, the more you care.
The older you get, the more you are inclined to say:
"I dont give a rats' &$$", " just stay out of my face"
Some kids are old at 8, 14, and some at 20 or 30.
However, a tiny part of you remains young and still cares.

I know I am eccentric. I do not like to dress up. If I am working on a project and have old work clothes on when I go to the store or to lunch, it does not bother me.
I do not like to shave or get my hair cut frequently. I do not own an Armani suit. I feel no need to try to impress anybody.
I am my own person. It does not matter to me what others think, as long as they know that I am honest and basically good-hearted.

To a certain extent, I think everyone cares a little about what others think of them. It's kinda hard not to especially when they all are jumping to give you their opinions when you couldn't care less. I try not to care but certain things do get to me and it's kinda hard to ignore them sometimes you know?

I only care about the people that matter to me - I want them to value me. I guess I don't want anyone to hate me, but I can't worry about people I don't know. I try to be a good person and treat everyone well - and that's all I can really do.
