here is a perhaps more intuitive/graphical approach:
The cube is three inches high. That is, the cube consists of three layers, each layer being one inch high.
Consider just one of those one inch high layers. That layer is three inches on each side. This could be seen as three columns (or rows), each one inch wide, divided into three one inch pieces, with the whole column (or row) one inch high. What you have is a block one inch high, three inches on each side, composed of nine smaller blocks. That is 3 inches x 3 inches x 1 inch, which gives 9 inches^2. Therefore this single layer contains nine blocks, each block being one square inch, so the volume of that single layer is nine square inches (9 inches^2).
Since we know the volume of one layer (one inch thick) of the three layer cube (three inches thick), we can multiply the volume of a single layer by three: 3 x 9 inches^2 which gives 27 inches^2.
