Remember the survival law of the threes:
No air: three minutes
No water: three days
No food: three weeks
Some include a three hours law for shelter in harsh weather, but that's not really a biological limit and so dependent on conditions it really shouldn't be considered a "law," in my opinion anyway. Interestingly, there is no generally accepted limit on how long people can go without sex. I suppose if they have air, water, food, and shelter anything can happen.

It really depends on the situation. If they are in a desert it will be a very short time.
As for a general look on it, a person can go for quite a while without food. Just take a look at someone who is anorexic.
You can go for weeks without food, but of course, someone who is larger (with more fat) will survive for a longer period of time than someone who is thinner. Also, if your metabolism is faster, it can be a lot less time.
After the body uses it's fat stores, it will start eating it's own muscle for energy.
If you go for longer than a couple of days you will become very weak.
Water is a different story. A person will die within 3-4 days without water.

Depending on the conditions, and who the person is.... Usually about a few days without water though, and no more than 2 weeks without food.

People regularly go up to 30 days on a fast, anymore and then they are going to have a problem. Very little time without water.

We are surprised all the time to discover survivors in desperate -previously thought impossible conditions.
It is easier to survive without food that it is with out water.
