I believe that STD is mistaken. Go to /Applications/System Preference, and go to the "CDs & DVDs" pane. This should show your settings on what do with a blank disk. I have mine set to "Ask what to do", but you probably have it set to open iTunes. Change that to whatever you want.

As for burning the clips, the easiest way to do that is to create a burn folder (In finder, go to File>New Burn Folder), and drag all the files/clips you want to it. Then hit the burn button (in the burn folder), and insert your CD/DVD, and it'll burn your data.

Not sure which computer you have or which version of operating system. Give us that info or we will not be sure what to tell you.

Only music CDs can show in iTunes. Your computer thinks you inserted a music CD. One of three things is happening here:
1. Either you HAVE inserted a music CD...
2. or your computer has some corrupt system files that make it confused...
3. or you have some other software installed that wants to shake things up for you but not in a good way.

Try a different blank CD-R. Same thing? Boot to the OS X install DVD that came with the computer. Don't reinstall anything. Just open Disk Utility from the Installer or Utilities menu. Choose the hard drive. Now click to repair the drive. Does it find any problems? If yes, that could be why things are wacky. If no, quit and restart holding the shift key for the whole time it takes to startup. That should give you "Safe Mode". Now put a blank CD-R into the drive and see what happens.
