It is still working fine, but every once in a while we can hear water dripping and occasionally ice shoots out of the front of it. What should we do?

Is the unit tilted back so it will drain properly? Is it new? If not it may be defective. Last year out coils froze up. The refrigerant was low because of a leak. The condensation on the coils is normal but it's supposed to trickle down and run out the back of the unit. Haven't you seen a glass of icewater on a hot day? The A/C coils are cold and have warm humid air passing over them. Otherwise make sure your filter is clean and all your doors are closed.
