The process is called Hematophagy. Only the female mosquito needs a rich source of food(proteins, lipids) for the Mosquitoe's lifecycle to proceed(lay eggs, produce eggs, etc). So any mammal which the mosquitoes can get their Proboscis(Organ which delivers the stinging bite) on, they will.

Mosquitoes not only suck our blood, other mammals too. Cattle, poultry, pet animals, etc are a rich source of blood especially at their ears, lips and extremities where they can reach the blood close to the skin. In human's case, it is all over our body(we are not covered with hair alot like animals).

PARASITISM: epidemic polyarthritis, Rift Valley fever, Ross River Fever, St. Louis encephalitis, West Nile virus(WNV), Japanese encephalitis, LaCross encephalitis causing parasite uses mosquito to spread the disease in humans. Eastern equine encephalitis (EEE) and Western equine encephalitis (WEE) are caused by parasites transmitted by mosquito bites in animals, humans and birds.

Well truthfully I did not know the answer to this, but i found this on a website, hope this helps: Thankfully, at any given time, in any population, less than half the mosquitoes are biters. That’s because, first, only females are hematophagous (Greek for blood eaters). Males are sweet nectar-loving types, peacefully sipping at nature’s juice bar. Second, most females feed on blood only when they need the extra protein to finish making their eggs; for routine fuel they’ll use plant sugars, too. In fact, feeding on blood seems a pretty well orchestrated event, dangerous enough that females have built-in controls to switch it on and off--they don’t seek out victims more than they have to. Actually they are drawn to certain colors,the warmth of your body and the C02 (carbon dioxide) that is in your exhaled breath. They are a "mini" vampire of sorts because blood is what the FEMALE mosquito eats. Males suck on plant juices.

Females do not require blood for survival, but they do need supplemental protein for the development and laying of their eggs. Prior to sucking the blood, they inject a mild painkiller, which numbs the host to the pain from the bite.

Only female mosquitos bite people. Male mosquitos do not. Female mosquitos need blood to produce eggs.

Only female mosquitos drink blood of animals.. and that is to make eggs. So- when you are bit-they are totally using you to make your life even worse!

The first answer was the right one. Female skeeters suck blood because they have to in order for there to be baby skeeters. Someone further on down the queue gave a much detailed description, but basically they do it for their little larvae-to-be.
