Well here's my standard Wedding DJ format. Please feel free to work it into your band sets...
*Formal Introduction/Entrance (MC duties)
Dinner Music (Jazz, Instrumentals, Standards, etc.)
*Formal Announcement of Best Man Toast (MC duties)
Continue with Dinner Music (Jazz, Instrumentals, Standards, etc.)
*Bride and Groom First Dance (Usuall Ballad of their choice)
*Father/Daughter Dance (If applicable)
*Mother/Son Dance (If applicable)
*Wedding Party Dance (If applicable)
*Cake Cutting (MC Duties/Instrumental)
*Bouquet/Garter Toss (MC Duties)
*Traditional Money dance (If applicable)
*Open Floor Dancing (All)
(Party Music till closing, with maybe a couple of slow songs for the older folks)
Note: Make sure you confirm all the above with Bride & Groom prior to the event.

Depending on how much time you have, give them your performance list, and ask if they have requests not on the list. Try to learn some of those. Let them know the final list before the wedding.
For MCing, discuss completely everything to go on, and sequence and approximate timing. Ask about specific songs for specific things. You can run the reception, and it will be great.
Our DJ also was the MC. Did a great job. The only things bad were three songs he picked, that were just wrong for our friends and family.
Music level will be low. We had him keep the level down so people could talk, and we got compliments from every person at the reception for that. Too loud music ruins nearly every reception. Every one over twenty-five, and many younger, want to talk to people they have traveled 100s or 1000s of miles to see. They should not be forced to yell in each others ear, or just sit sullenly while listening to deafening music by a discourteous DJ.

i would do a mix of upbeat and slow.... like 5 fast 2 slow etc.
party faves... and you can always use a cd or ipod of music for breaks...
make sure you get with the couple getting married...
to see if they have a song they want for 1st dance, mom son, daddy daughter, dollar dances etc....
you can ask about how much talking they want too..
