I have a friend who has been doing this for at least 10 years but I moved away and am just curio on the safety of this...Can you can tomatoes by boiling the juice,washing (using vinger) & heating the jars in the dishwasher, boiling the lids,then when the tomato juice has boiled-about 15 minutes- she takes out the jars, adds the tomatoe juice, puts on a lid, screws on a band- then turns them upside down for 24 hrs. - they always seal for her- seems easy and watching her looks easy...But is there a danger in this? I would like to know......

I do a lot of canning and always turn my jars upside down for 24 hours.My mother did that for years before me.
Just an extra precaution to make sure they're well sealed.
As long as everything is properly cooked and sterilized,there is no danger.
Obviously it's working ok for her as she's been doing it for ten years with no mishaps (sickness, whatever) and is following proper procedure.
I also do my jars in the dishwasher and my seals and screw caps in a pot of boiling water on the stove top Of all the people who I know who do home canning,I've never heard of a jar bursting yet. I'm past 60 yrs. old.They're made to withstand intense heat.

Canning has been done for the longest time. If the jars seal, they are sealed. No different than buying goods at the store.
If air gets inside because things are not quite cooked (and are still fermenting) then there is a problem. She has been doing it for 10 year and ain't dead yet, so she must have figured it out.
There is a bunch of trial and error that goes into this process on first time veges and fruits and meat. Trust a cookbook on canning instead of internet though.

I've been canning for 55 years, and have never heard of this. What I would do is make the juice, put it in jars, add the lids, and put them in a water bath for 25 minutes. I would be afraid of the growth of germs and fungus if they are not sterilizedl.

never heard of turning up side down? it sounds more mess than dangerous. The boiling tomato is dangerous just getting burnt. good luck The jar's have been know to burst.

Your friend is letting the juice from the tomatoes give her a second seal.

Sure you can. It isn't necessary to turn them upside down.

Do check to see if they sealed. Press down on lid and if it is flimsy (not stay in place) they aren't sealed, so just refrigerate and use. Good luck.

Tomatoes are very touchy, it's because of the acid in them. I love to blanche them and freeze . If you have never canned before start by canning jelly. It is much easier.

you can get a seal this way but a water bath with the jars already filled is better and safer
