Its from symbolisim and honour for Roman and Greek gods. A sign of strength and power which was used during the Roman conquests as the armys standard bearer. Unfortuantley this was also adopted by Nazi Germany as their leader was obsessed by the occult and historical tyrants and dominating civilisations.

Because it was the bird of the ancient Greek god Zeus and the Roman Jupiter.
The reason was simple, these were the gods of the sky, and so their sacred animal was naturally the largest and most powerful European bird.
The Romans then used the eagle, symbol of their chief god Jupiter, as the standard for their armies.
From this the eagle entered Medieval lore and heraldry as as symbol of power, and that has carried through to our own modern culture.
The Eagle as the King of the Birds, is occurs in the popular Fables of Aesop (again because it was the bird of Zeus). Aesop said the eagle ruled the birds, the lion (another symbol of power) the animals, and the dolphin the fish.

The Eagle represents spiritual protection, carries prayers, and brings strength, courage, wisdom, illumination of spirit, healing, creation, and a knowledge of magic. The eagle has an ability to see hidden spiritual truths, rising above the material to see the spiritual. The eagle has an ability to see the overall pattern, and the connection to spirit guides and teachers. The eagle represents great power and balance, dignity with grace, a connection with higher truths, intuition and a creative spirit grace achieved through knowledge and hard work
ok I cheated, there is a lot more, but I think I did enough copy & paste, don't you? lol.

Eagles are big, strong, majestic looking birds that have the ability to soar to great heights.
Ben Franklin wanted to use the Wild Turkey as the symbol of the U.S. of A. and when one looks at the current administration it seems to fit!

Apart from the fact that the Eagle is a powerful bird, it also symbolises grace, majesty, the "soaring to great heights" and, above all things, that for which America stands as the greatest defender and advocate.... FREEDOM.
