You could have (could have) offered to settle any claims for the specified amount -- your promise not to file a lawsuit in the future is a future promise which would count as consideration.

What case? If a dog bites someone, the dog owner can offer to pay for the medical care and something in addition for the lost income or pain or inconvenience. That's consideration in legalese, but it's not mutual consideration, unless the victim specifically agrees not to to sue in exchange for the payments. The dog owner would be responsible for such damages in any event, as a form of restitution (making the victim "whole").
