A nice pen - a metal one that takes refillable ink is a good gift. Many are inexpensive but LOOK expensive. Parker pens are good for this purpose.

Maby a holiday card that with a picture of that staff on it saying "Happy Holidays From (the name of the hotel) To you!
or
A Christmas ornament, or a holiday scented candle (one of the small ones) like candy cane scented. Or just maby a
canycane with a Christmas bow raped around it!
or talk to your boss and see if the staff can put together a Christmas dinner/party
or you could do something simple like put out a container of hot chocolate with paper cups and Holiday cookies for the guests

Clients staying at 5* hotels have enough money to buy whatever they might need; therefore, I suggest you think of a homemade gift. For example, buy a pretty plate at a thrift store and pile on cookies, fudge, etc. Or, back to thrift store (or antique store) to buy a vintage teacup and saucer and buy single serving teabags (try coffee shop in mall). Buy some SculpeeDo and make holiday ornaments--one of a kind--don't forget to date and sign it somewhere inconspicuous. Or take pictures of flowers, buildings, or something you know they like and print 5x7--mat and frame less than $5--7 at WallyWorld.
Make the gift come from the heart and it will be more precious than anything "cheap but looks expensive."

I would suggest surprising them with something in their room, either left on the bed or on the desk. A simple box of candy or a bottle of wine (there are good wines in the $9-10 range -- just ask your local liquor store for recommendations) with a note that says "Wishing you the best this holiday season." and sign your name.

I am sure your regular guests are not expecting gifts (nor should they). To be politically correct, they don't all celebrate "Christmas" either. Lavish them with excellent service.

you shouldnt be the ones giving gifts.. you are an employer. if you feel the need to do something.. just the recognition of their name when they come in is nice enough.
