Bike will stay running with the choke on. When I start to take the choke off I can rev the engine up and it sounds good but when let off the gas it will idle really low and eventually stall out.

Needs a carb clean.
The pilot jets are clogged.
The pilot jets are also called "slow speed, or idle jets"
With the choke on, additional fuel is allowed in and compensates for the clogged pilot jets.
When you take the choke off, there is no fuel going to the idle circuit.

sounds like your pilot jets are plugged up, did the bike sit for a long time? gotta remove the carbs and clean them which sucks because you cant buy the float bowl gaskets without purchasing the entire rebuild kit its about 20 bucks per kit and you need one for each carb. the good news is the kit has brand new jets in it so just change em out. More bad news the carbs have to be synchronized whenever they are off the bike, you can pay a shop to do it for about 65 dollars. Or spend more money on the gauges needed to do the job and the special long angled screwdriver needed.

You need a carb cleaning. Deposits have built up inside that need to be cleaned out. Most like you will not be able to clean this out by spraying stuff in there. The carbs have to be taken apart completely and every piece cleaned by hand. You need a competent technician to perform this.

This is pretty common with carburated motorcycles. With the gasoline these days that has all the ethanol in it, the bike doesn't have to sit around for long untill deposits start building up.

I'm going to venture a guess that the tiny idle jets in the carbs are plugged due to gum and sediment. The only real fix is to have the carbs disassembled, properly cleaned and then reassembled. Check for rust in the float bowls...

Dirty carb.................. take off your air filter and inspect it, might need to replace it. It also would not hurt to get a can of carb cleaner and spray your carb either.
