and was wondering how much one's major would weigh into the application reviewers' decision. I'm currently double majoring in Social Welfare and Political Science, but since it's my last year of college, I'm wondering if I should just try to stick with one major and focus on trying to boost my GPA as high as possible.

If you feel that the double major is confusing you and keeping your GPA low, then definitely, you should cut back to one. I don't think most law schools care if you have one or two majors, but they care very much about your GPA.
