Honestly, the scientists who discovered them. Their names also originate from other cultures and ancient languages. I don't really see where "God" nor creation come into play here. The question that you ask concerns how we as human beings characterize animals into groups so that we can all universally communicate. It's about communication- not creation.

I really enjoy it when Christians have to jump in with their pat Christian answers without thinking or reading the question more than fleetingly. There is no way that anyone could state who named the animals of the world because there are as many names for animals as there are languages in this world.
An example: A Cous-Cous is the Motu label for what users of English speak of as a Tree Kangaroo. The Simba of Swahili, is a Lion in English.

If Adam were running around for a while with nothing to do (and no woman!), then there is little doubt that he would have named whatever animals that he ran across.
Of course, no one knows what language Adam spoke. Most likely it is a language long-dead, and few if any of those names have survived.
Most animals today have several different names in different languages, particularly those animals that are native to the speaker's locale. For example:
English - eagle
German - Adler
Spanish - águila

The naming or labelling of all things that we could see, feel, touch, smell, hear, and perceive mentally came into existence with time.
WHY?
Because it helps us to IDENTIFY what we are talking about, when communicating with each other.
