If I take the Eurostar from Amsterdam to London, and it stops in Brussels, can I backtrack to Bruges on the same ticket? Rick Steves said you can, but he mentioned it on a London to Brussels trip, so I didn't know if that made a difference.

The tickets travelling Amsterdam to London work the same way as the tickets London to Amsterdam.
But as you will have to buy your ticket Brussels London far in advance, to get a good price, that part of the trip will be fixed to a time/date.
So you can leave Amsterdam early to get your time in Brussels.
If you have a return ticket London-Amsterdam you likely have either a Thalys ticket Brussels to Amsterdam and Amsterdam to Brussels, with reserved seats for one particular train, in which case you will not have time to spend in Brussels (check-in for the Eurostar is 30 minutes, do not be late, they leave you and you will have to pay extra for the next train.)
Or you have a ticket for the normal train Brussels - Amsterdam and back, which will be valid for a longer time, and you can either stay longer in Brussels before coming north, or you can leave Amsterdam early and stay overnight in Brussels.

I would take my Brussels stop before travelling on to Amsterdam, unless you have to be there on a particular date.

Added:
For Bruges you get of in Antwerp and take a local train, you best buy a ticket when in Antwerp or when in Brussels if you have time there.
It can be added into the trip on both legs, depending on when you have time.
