The best way to do it is through each team's alumni asscoiation. Many players after they retired have chosen to cut off ties with the NHLPA, but almost all of them are still part of their respective team alumni. Some teams like the Original Six teams still have several annual events for their alumni which are also open to the public.

YOu can contact all teams through the addresses they have on their websites (all teamsd have an official website that is linked directly from NHL.com), and they will forward the mail appropriately.

Keep one thing in mind, during the 90s, the hockey card craze made a lot of these older players gun-shy as they were receiving a ton of mail a week asking to sign cards, etc. Treat the player with respect, and he'll treat you with respect back.
