I would give her a chance. Honesty is hard to find these days. It might be her way of being honest with you, from the git-go. Does she have OCD perhaps? Germaphobe? Maybe she is a doctor or scholar of some sort and knows/studied that most public surfaces have insane amounts of harmful bacteria? We all have our good and bad points. If one can admit it.

well I would tell her to hold her energy for the end.
Because she was gonna pay the dinner ... cleaning the tables and washing dishes... You could simply stay in the car waiting... of course :)

She has a touch of OCD now, does she? Not much you can do about it, and servers have dealt with this kind of thing before. Don't sweat it, just let her do her thing; if her routine is interrupted, it could end badly for you.

I would most likely get up and leave. That would be mortifying!

It appears that a person like that has issues that need tending to.
