We don't. Just as you noted the subjectivity of boredom and interest, some people avoid change and some people enjoy change. Similarly, to part 2, some of enjoy and celebrate difference, others fear it and avoid it.

Our fundamental beliefs are the source of the difficulty. I view change as neutral. Some change turns out well, some bad, and some is inconsequential. If you believe that change is bad, you will suffer under that belief system.

1: People really don't know what a change can bring to them good or bad. Why to experiment with new when the old is good enough to solve problems or sufficiant resources. It is the veiw which makes people to fear the change. But once the change is in and it is there for a certain period of time the very change is old and acceptable to them.
2: Lack of knowledge and lack of open mindedness is the cause for people to accept things which are different to Us

1. It's not what we know, and therefore, not safe.
2. It's not what we know, and therefore, is threatening.

Edit:
I'm going to disagree with guru. Those who thrive on change, usually thrive on change that is not too far beyond their comfort zone. As that comfort buble expands, they appear to seek bigger leaps of change, but incrementally, it's not all that much. Fear of what is different works similarly. These loop right back into 1 and 2 above.

The second reason some seek change is about confronting fear. It's still about fear, but instead of cowering, it's about confronting or challenging.

As much as these seem negative, they tie into basic primal instincts. These are about survival, but hey, too much of a good thing is bad. So, there is change.

The one phrase answer to both parts of your question is "the fear of unknown".

Why do we fear the unknown..... in my view it is basically a sense of insecurity arising from uncertainty.... the uncertainty factor is much higher in unknown situations and people.

However, there are people who invite in or seek out change.... these people are curious by nature who want to know the unknown instead of avoiding it..... one is a positive approach and the other a negative approach arising from the same issue..... that is a sense of insecurity towards the unknown.

1. we don't fear change, we just feel hostility towards anything outside our comfort zones -- i'd call it starting truouble, we all adapt eventually!

2. fear kicks in where understanding stops. if there's something that we can't relate to, we might end up having negative feeling towards it -- fear is one such feeling.

I don't agree with your assumption - that all fear change and what is different to us. I, for one, revel in it.
