If you work over 40 hours in a week, then overtime pay is required by federal law. Those hours could be spread across 7 days for the week without paying overtime.

The employer can define the start and end of the week as long as it's a consistent, consecutive 168 hours. It doesn't have to be Sunday through Saturday - could be noon on Tuesday until noon the following Tuesday.
