I love Tilapia! Here in TX people are lucky enough to be able to catch it fresh. I have never caught one personally, but my neighbor brings me tasty filets all the time. YUM! Such a light fish with great texture. I enjoy it lightly blackened. :)

Defrosting fish is easy: either you leave them in the refrigerator overnight, or in your case, put them in a large bowl, and run cold water into the bowl until they're defrosted. It shouldn't take that long....30 minutes maybe? If you're opposed to running water that long (and no reason you shouldn't be!), then you can simply check them every 5 minutes & change the water out. The water should be about 65 degrees in order to defrost the fish. When they're defrosted, put them in the fridge again till you're ready to prepare them.
