Well I don't know exactly. But I believe it is not mere knowledge. It is a methodology for discovering new things, verification of hypotheses through experimentation. Making models of reality.
It is an attitude, we don't know anything for sure, we just have varying degrees of confidence in laws and theories depending on how well and how long they have worked. Everything is subject to question and change. Science doesn't answer the why questions, just the how questions.
