I know I can play by myself and a partner but what a bout a 3rd?

Sure you can.

Select one person to serve and if he wins the poind he continues serving. If he looses the point, whoever hit the last shot is the new server. Rotate the backfield positions to eliminate any right-hand / left-hand advantages.

The only problem these days is to find 3 handball players.

yes it can be played with 3 people. it is Called "cut throat". 1 player plays against the other two when it is that persons turn to serve. then when the serve is lost the next player serves and plays against the one who was just serving and the other player who has not served yet. then it keeps rotating as the game goes on.
