It has to be a "Fryer". The reason is the term. When cooking in oil, it is a "Fry Pan" also known as a "Frying Pan" that is used. For deep frying, you use a "Deep Fryer", therefore a person using a "Deep Fryer" is a "Fryer" as he / she is part of the process. As for "frier", that is not a word. You can have a "frie" as the Yanks call a chip but not a "frier" as that would mean a "chipper", which is a machine for cutting potatoes and a "chippie" is related to a chip shop or a carpenter (wood chips).
