Americans have a lot of "slang" sentences that often say something different than they mean....usually they came from something that got it started.
"Gimme a break" actually can mean two different things....is usually said for "give me a break"....."cut me some slack"....
"back-off"...etc. all to mean "why are you giving me a hard time about this....give me a break and leave me alone....or at a time when you are actually working it could mean just what it is saying....."give me a break from work...I need some time out".....but usually it means the first way...back off and give me some peace!

Gimme a Break - I think it means you're being a bother in some way.

because they feel slighted or would like a small favor like some respect ....oft times the annoying prattle of stupid nonsense bothers me so much I think to myself what did I do to deserve this just give me a break please. it can be very distracting when trying to accomplish a job or planning out ones life.

it could either mean that you are bothering them and they want you to leave them alone or it could mean that you're telling them something and they just dont believe it. like "oh come on, give me a break" its like sayin 'you're full of sh*t'

There are two uses that I can think of:
1) As if saying "C'mon... are you serious?"
2) "Take it easy on me".
