It means that you shouldn't overstay your welcome when being someone's houseguest. It's fun to have someone visit for 3 days, but after that you start to want your own space back.

Dear Bub,

If you left a fish lying around your house for three days, think what your house would smell like. Would you like it? What would you do with the fish? Probably throw it in the garbage?

If you are a visitor at someone else's house, don't stay longer than three days or your host will think you stink like a dead fish and will want to throw you in the garbage too.

After 3 days fish (dead fish not aquarium fish) is unpleasant to have around the house.
The saying means, after 3 days visitors may well have been there long enough. It could be time they went home.

Seriously, there is a lot of truth in that proverb. It means after 3 days of smiling, cooking, entertaining, picking up after them (and the thought of washing/changing the bed linens AND more washing of a ton of towels) your patience - no matter who the company is - has nearly reached its limit. So, time to leave on a good note for everyone concerned !!
