Super Easy Chicken Enchilada Casserole! My family's favorite!!! I don't really measure when I cook, so for everything just do what looks right :-p What you'll need: 1 8X12 casserole dish 1 large skillet or pot 1 pack of corn tortillas (20ish count) 2 cans green enchilada sauce 2 small cans diced green chiles 1 full package cream cheese (I use the reduced fat) 2-4 cups shredded cheese (Monterrey Jack, Cheddar, or any Mexican blend) Chicken (I have used 3-4 chicken breasts grilled and shredded, but last time I used a small lemon-roasted chicken and shredded the whole thing and it was delish!) In the skillet/pot, combine the enchilada sauce, chiles, and cream cheese. Stir around constantly until the cream cheese melts so that it doesn't stick to the bottom or burn. Add in the chicken and stir to coat the chicken in the mixture. In the casserole dish, line the bottom with one layer of tortillas. I usually use 6 on each layer, they should overlap enough to cover the bottom. Pour in 1/3 of the chicken mix and top with cheese. Repeat until chile mix is gone. Top the last layer with one more layer of tortillas and cover that with another layer of cheese. Put in the oven at about 400 degrees about 20 minutes until the cheese on top is bubbly/melted. Serve with salad and spanish rice :)

Burn them into a liquid to make some kind of cheap fuel. Pour it into your gas tank and see what happens. Maybe it will work. Then you will be a millionare. That's a pretty good deal; I'd take that risk. But, I'm a ninja.

Put it in a covered microwave dish. Add barbecue sauce
and cook just long enough for the sauce to cook into the
chicken. Yummy!
