When do I pick Broccoli and after I pick the big first head will it produce more? I think my first one has started to seed.

Pick your broccoli when it looks like a fully formed head. People who are new too broccoli will tend to wait too long because they are waiting for it to get bigger. The broccoli flower or head should be firm and tight. If it begins to loosen up then it is getting ready to go to seed. You will know if you've waited too long because it will begin to bloom with little yellow buds.
As for will it produce more, Yes it will but not another large head. It will produce several small spears of broccoli which are just as good as the main head.

Broccoli is a cold/cool weather plant so always plant early or it will "bolt" in hot weather. In other words it will quickly go to seed. Harvest as soon as the sprouts/heads are big enough to eat. They will continue to sprout for harvesting.

The edible part of broccoli are compact clusters of unopened flower buds and the attached portion of stem. The green buds develop first in one large central head and later in several smaller side shoots. Cut the central head with 5 to 6 inches of stem, after the head is fully developed, but before it begins to loosen and separate and the individual flowers start to open (show bright yellow). Removing the central head stimulates the side shoots to develop for later pickings. These side shoots grow from the axils of the lower leaves. You usually can continue to harvest broccoli for several weeks.

Don't forget to harvest a few of the leaves. The young ones are good in salads & cole slaw, the older ones are good steamed.
