The kidneys are a pair so that neither is overworked, especially on those party nights.
The appendix is necessary so that interns can scrub in on an operation, but not for anything that could really mess the patient up.

I took a gander at your question because I'd like to know the answer too, but no-one has answered your question convincingly yet.
But, if we've got two kidneys because two do a better job than one, then why haven't we got two livers (so we can drink more beer!)? or two hearts (so we've still got a good one when some 'orrid person breaks one!)? Seriously though, surely, two hearts would be more beneficial all round, than two kidneys?
The appendix is less important, but equally mysterious.

Evolution. The animals with 2 kidneys could survive better and therefore replicate at a higher rate than the ones with only one kidney.

we have two kidney so that either is not overworked. And we have an appenidx as a remnant of our ancestors. They needed it to help digest the amount of plants that they were eating. We are now omnivores, and don't need it. However it has not disappered because it does not hinder our everyday life
