Unless it's super thick leave it. It will decompose and create compost for your lawn.
Besides, the first time you mow the new grass, it will be dispersed. Next time use straw, hay can create problems leaving weed seeds behind.

You keep it on till the grass protrudes through it, if the straw is a thin layer you just leave it and let the grass grow through it, But if it is a thick layer of hay lightly rake it off you don't have to get it all it will help hold the moisture and will turn to mulch, but keep it wet.
