According to the legends ( and Hollywood) they spend their days sleeping in their coffins. In middle ages Europe it was not uncommon for someone about whom it was feared that they would become a vampire after death to be buried face down so that if they tried to dig their way out they would go in the worng direction. It was also known that some people were nailed or spiked into their coffins for similar reasons. In some cultures it was a practice to put shoes made of nails on a person so that they could not walk the Earth after they had died.
In the modern world however, it is known that while vampires have an unusual sensitivity to sunlight they are not going to burst into flame. Besides now with spf50+ sunblock, and dark uv shielded sunglasses, sunlight isn't a problem anyway.

It depends on what you mean by vampires. In traditional folklore, vampires are reanimated corpses. They are not immortal because they are already dead. At night they get up and move around. They seek a nourishment which will keep them moving. If from someone they knew when they were alive, so much better. During the day they don't move. Therefore they aren't reanimated and they aren't sleeping: they're just dead.

During the day time, vampires sleep in a coffin filled with their native soil. This is when the vampire is most vulnerable, hence the need for sentries like wolves or loyal humans. Those that can operate in the daylight.

these days vampires have adapted greatly to sunlight but still dilike the sunlight
back then they would sleep and come out in the night

sleep. but if they're in total darkness they can be awake, say an eclipse or in the new movie 30 days of night they pretty much have free reign in Alaska for those 30 days

They are often said to sleep in their coffins. You have surely seen some "Dracula" movies. Maybe they have weird dreams during this "coffin time". Maybe ther are double coffins for a couple of them. I'll leave it to your imagination what they might do all night.
