Amadeus was entertaining and fun, peppered with facts, and huge fictions.
He met Salieri only once, and briefly.
Mozart was not poisoned -- he died of typhus, according to some sources, but whatever it was, it was a massive infection of some sort.
The Requiem was written as a result of a commission by a gentleman, Franz von Walseg, who had a habit of commissioning works from famous composers and then passing them off as his own. Salieri did not help him finish it -- it was finished after his death by Sussmayr, at the behest of CoNstanza. (I have always wondered how he knew what Mozart's intentions were).
There are a number of good Mozart biographies out there. Look 'em up at Amazon and then read one or two to get the facts.

The most startling thing about the movie is that Mozart was not poisoned by someone else. Medical pros today have reexamined Mozart's various letters and health issues inditing he was a raging alcoholic who destroyed his organs, and thus, poisoned himself, without a doubt. Kidney's would no longer function...heavy drinking. Medical pros are convinced beyond a showed of a doubt that is what kill led him.
As for the mysterious stranger near the end, a rich nobleman commissioned Mozart to write a Requiem for his deceased wife. Some copies which musicologists have found have Mozart's name crossed out on the score, and this nobleman's name etch in, obvious thievery.
Mozart would have championed every 12 step group around he was an insatiable gambler who'd lose fortunes in just one night. He also had many sexual flings.
He wrote concerti for every known instrument at that time. He also wrote a collection of dirty songs which have been recorded.
I like the fact that Mozart had been married for quite a few years to Constanza, and they had 6 kids, two of whom, survived. One was musically illiterate. However, Franz Xaver Mozart, who was only 3 months old when dad died, is being rediscovered. In fact, in the 1840s, this son actually played his dad's piano concerto in public for unveiling's of statues and monuments top his dad. He was highly accomplished, but not as good as daddy.
Mozart (Wolfgang) was revered by musicians of his day. Also, Salieri was often seen playing viola in Mozart's orchestra. He loved the music, but not the man.

Great movie, tall tale.
Amadeus has little factual substance. Mozart and Salieri were actually on pretty friendly terms. Mozart is believed to have died of Rheumatic Fever, a form of heart disease.
The Requiem that he wrote was not for himself, but a client who paid him well for his services.
Try reading "Mozart - A Life" by Maynard Solomon.
