Five furry chipmunk we simply adore.
One hid behind a branch and then there were four.
Four furry chipmunks were climbing a tree.
One slid to the ground and then there were three.
Three furry chipmunks found an old shoe.
One crawled inside of it, then there were two.
Two furry chipmunks were chasing in the sun.
One got tired and rested, then there was one.
One furry chipmunk wanted to run - so,
ABRACADABRA! Then there were none!

The poem about the Pied Piper is very much about rats.
Rats! They fought the dogs and killed the cats.
I don't remember the rest, I haven't read it since 4th grade.
There's also a kind of poem called Future Legend, at the beginning of Diamond Dogs by David Bowie.
Fleas the size of rats, sucked on rats the size of cats.
There's also a poem in one of the Christopher Robin books by AA Milne. Something about a mouse who's tail was enourmouse (sic). The typography in the book was quite amusing, the whole poem was shaped like a mouse tail.

I liked your rat haiku answer above. That is probably where you should search.
Now, if you considered politicians rodents, it could probably bring you more results.
Here is a rat poem I found that I liked though (not a ratku):

I think Robert Browning wrote one called "To a Mouse." (No, not "To a Louse," although he wrote that one too).
There's also a sweet little poem called Pippa's Song that I can never remember who wrote or how the whole thing goes. It's something like "Year's in the Spring, Day's at the morn," some other lines, and it ends, "God's in His heaven, All's right with the world."

My X husband turned out to be a rat.
Who just could not understand that...
His constant running around the bars
Left noticably constant scars
Good thing this cat left that rat!
