Yes, check the sites like gpureview.com, tomshardware.com, etc for full breakdowns. But for Nvidia cards the general rule is:
LE = stands for limited edition, but think Low-End. The worst version of a card
GS = budget card, scaled-down or lower clockspeed version
GT or GTS = full-featured version of a card
GTX = high-end version of a card
So a 7600GT is better than a 7600GS, an 8800GTX is better than an 8800GTS
On some older Nvidia cards you may spot an XT designation, that's also a low-end version, but better than LE.
For ATI cards:
SE: lowest-end cards
Pro: standard version
XT: better version- more memory or higher clockspeed
XTX: Best version

For Geforce 8600 here are the variants from slowest to fastest:
1. Standard clocked 8600 GT
2. Factory overclocked 8600GT
3. Standard clocked 8600 GTS
4. Factory overclocked 8600 GTS
Personally, I think #2 is best bang for the buck, especially the ones w/ hefty coolers (Zalman, etc.) that you can overclock some more.

Your best bet is to go to the popular hardware review sites like Anandtech or Tom's Hardware. Click on their video card links to bring up video card reviews and comparisons.
Video cards are usually released in generations such as nVidia 6000 vs 7000 vs 8000 series. Within these series, the higher numbers usually mean faster processors. The letters GT vs GTS usually mean faster graphics memory. The included link will take you directly to a report on the nVidia 8600 series with full explanation.
