"Madder" because you only use "more" or "most" when the word has more than two syllables.

More mad and madder are both correct. If you said "more madder", that would be incorrect.

more mad, i have never heard of madder. its like when i was young i use to say to my parents "You are the bestest parents in the world" but now you say "you guys are the BEST"
