i was just watching the space shuttle launch and i was just wondering what those things on the boosters or w/e that looked like they were exerting steam before the launch

Liquid oxygen , which is part of the "fuel" in tanks, is very cold. As it warms up it boils and the gaseous oxygen is vented to the atmosphere by those "things" It is cold so it condenses the humidity in the atmosphere making those "steam like" vapor plumes.
