Actually, according to Wikipedia, the term cowtown(http://en.wikipedia.org/wiki/Cowtown) can either mean a "hicktown" or a town that literally does have a cattle industry. That is Wikipedia's definition, not mine, so don't accuse me of being a "bigot."
I don't know much about the cattle industry, so, I don't know if Denver is a cowtown in that sense.
However, one could make the argument that Denver is a cowtown in the "hicktown" sense of the word. Compared to other major cities (like Chicago, NYC, San Fran) Denver lacks culture, sophistication and identity. Most people from Denver are not originally from there. The few people that are natives are mostly rednecks who are highly resistant to change and despise the transplants for ruining their "simple" lives. Overall, Denver natives are unsophisticated, conservative, narrow-minded, have an unhealthy infatuation with John Elway and the Broncos, drive gas guzzling pick up trucks/suvs for no reason other than to try and look tough, and represent the word "hick" well. All in all, Denver is not an all out cowtown, but it feels more like a cowtown compared to other major US cities.

No, Ft. Worth Texas is officially "Cowtown", and proud of it. Denver chose to stop being cow town in the mid-1980s and made a concerted effort to become cosmopolitan. Cowtown means a town that used to be the hub of the beef cattle industry, where cattle was raised or shipped, and there were always a lot of cowboys present. It is also a town that embraces that legacy and tries to maintain an old wild west feel in the midst of it's modernization.

Let me start of here with a tiny rant;
All you bigoted dinks need to get a clue! The term "cow-town" has nothing to do with being redneck, stupid, or isolated. It means that your town has a significant cattle industry there.
I don't know for sure, but I would imagine that Denver has a large cattle market there. Wear the cow-town image as a badge of honor. Your town helps feed the world. Be proud, but hold your nose when they go through town.
I currently live in KC, a huge cow-town. I have also lived in a small town with a beef packing plant in it. That was foul smelling, but it brought a lot of money into that town.
