Unless you are talking about wood from a rubber tree (Hevea Brasiliensis, the natural rubber tree) then oak is the obvious answer.

Wood from rubber tree, called parawood or rubberwood, is used in the manufacture of high-end furniture because of dense grain, minimal shrinkage, and ability to take stain well. It is not as strong as oak.

Depends, if you're building a structure or small fixture, Oak. Rubber bird houses or chests don't fly.

But if you're just looking to see which one can break the easiest, it'd be the Oak. Rubber is so flexible, it might be hard to just snap in half.
