Liszt's 'Mazeppa' is specifically about a fella tied (in an alarming state of undress) as punishment to the back of a horse which is driven out to rampage across the steppes...
(The orchestral version as Symphonic Poem #6 may be the better version for your purpose, compared with the Transcendental Study #4 for piano, based on the same material.)
Then there's Franz von Suppé's Overture 'Leichte Kavallerie"... ('The Light Cavalry')

The finale of Mendelsohn's Italian Symphony (#4) gallops along, although most consider it a "saltarello". The Trio to the Scherzo of Beethoven's 7th Symphony has a majestic and undulating quality. The finale of the same symphony would work well too, I think. In fact, now that I think of it, the Scherzos of the 3rd and 9th symphonies would work quite well, too

The last movement of Tchaikovsky's 5th symphony has a distinctly equine character (the second theme) and does the nice like part for oboe and horns in Bach's Brandenburg Concerto #1.
