The offereings are usually a sign of respect for the spirit.

Or at least, that's what I would assume as a Pagan. I've never studied Voodoo in much depth, but it's traditional for many ancestor-honoring religions to leave "gifts" of food, drink, incense, etc.

The spirits in voodoo are very moody and touchy. Invoking them in the proper way assures that they are willing to work for you otherwise they can make you go crazy. Its all about honor and respect.

Sometimes it's the spiritual essence of the food they feed on. A tai chi master knows that the stone in his hand is nothing but a condensation of energies. Often spirits feed on this energy and derive sustenance from it.

Spirits in Voodoo aren't what most people think of when they think about spirits. They aren't ghosts of dead people. They're called Loa (among other things) and are better thought of as Small Gods or angels, though neither term is quite right.

Their worshippers serve them things they like in hopes of currying favour, etc.

Spirits do not need food, they need energy. It is necessary in order for them to manifest and have power.
