Assuming that "Mendoza's" is hip, upscale, and new age enough... I'd order:
1) gazpacho with avocado topping
2) arugula salad with figs, pistachio nuts, dressed with evoo and fresh lemon juice - fresh cracked pepper, of course
3) seitan and nopales (wheat-meat sauteed with cactus and sweet onions) and herbed wild rice medley with shiitake fresh corn kernels
4) coconut and mango sorbet
drink: a cold bottle of San Pelligrino with lime
