Because they don't want to give away free advertising space to brand names. Also the contestants could be wearing a brand in competition with one of the paying advertisers in the show's time slot which may get the network in trouble.

They blur out signs and logos,because they can't seem like there using the people on their show to endorse companies products.So if a shirt says we love to shop at....they would most likely blank it out.

For different reasons 1)It says something that could be deemed offensive2)It may be a competitive product of one of the sponsors.3) they don't want to appear to endorse what ever product is printed on the shirt

the shows dont get paid for ads or maybe its offensive
