The gift voucher stated that it would expire within 12 months of purchase but I couldnt get into store then.
Is there anything I can do, anything that protects consumers so I dont lose my money?

For the first part, whether there is anything you can do, my suggestion is to go down to the store and ask the manager for help, nicely, it's a favour if he/she lets you.

2nd part, whether there is anything that protects consumers so that you don't lose your money, well, not that i know of.
