I prefer to use "moly" or molybdenum for my boat trailer thru buddy bearing hubs. Applying a few shots from the ol grease gun when the springs move from outermost "full" position.
Moly grease is VIRTUALLY insolvent to all solvents, so you know that water would have little adverse effects. though not completely. Failure would be attributed to the dreaded heat factor from improper install of bearings as well as improper grease maintenance.

bearing buddies and marine grease... dont over grease either, and get some bearing buddy bras to prevent slinging grease all over your wheels
just top off the grease 2 or 3 times a year, my bearings are original and my trailer is a 1995 model. and that trailer has been pulled thousands of miles with no trouble

Standard wheel bearig grease will actually absorb moisture.
Use Marine Grease. As long as your seals are not leaking the spring tenson on Bearing Buddies will keep positive pressure on the hub & not allow water to enter.

It is best to install "bearing buddies" which help keep the grease pressed into the bearing and have as external fitting to allow easy reloading. I re-fill my bearing buddies after submerging the wheel bearings by launching. It forces the trapped water out of the bearings.
Use any marine grade bearing grease. It must be marine grade.

"Bearing Buddies", a see thru plastic bearing cover that you add marine grease to until the plate lifts off the grease, and is pushed back in by a spring (you can see this, so you know when to stop adding grease.

get some stern tube grease it don't wash out so quick as axle grease,its white in colour.if your useing ordinarily oil seals replace them with stainless spring type.

standard wheel bearing grease is fine for this,if you have quick lubes on it you can pump it strait in to the bearings this way ,i only do mine about twice a year ,maybe more,if it doesn't loose any from the seals ,your ok with a few times a year,good luck on it.
