Does my ipod have to be plugged in for that to work? Because at the moment it's all 'greyed out', meaning I can't click in any of it.

Click on the song once to highlight it, then click on the song name again to enter edit mode, then type in the correct title. Also, you can right-click on the song, choose Get Info, then on the Info tab, where you'll be able to edit song info.

Add.: Are you sure you're viewing your music from the Library: Music section?

In iTunes you have a source box on the right side window. Be sure your clicked on library/music.

If the song is grayed out then iTunes can't find the file associated with the song. You will see an ! mark next to the song.

Highlight the song you want to change, then right click/get info then the info tab. You can change the name and add all kinds of info including album cover art.

Just click to hightlight the name of the song. When it is blue already, click on it again. Then you will be able to change it. Same thing for the artist, album, or genre. That's all I have to do to change them.
