The phases of our moon have 4 terms to describe 4 points in the ongoing changes the moon displays each month.
Each of the 4 phases (new, first quarter, full, last quarter) simply refer to the 1 day in the month when the moon is in that particular "phase".
But remember, every day the moon phase has changed a bit, its not like one day it's new and then *bang* its suddenly first quarter. It's a gradual change during the month.

We can categories moon on one criterion, that is tidal locking (give a search if u don't know what it is). first category is when moon is locked to it's planet (i.e. it always faces the planet, like our moon). second category is when the moon and the planet are locked to each other (i.e. both of them always face each other, like in the case of a geostationary satellite). third category is when planet is locked to the moon. you can add few more categories when moons are in between these states.

most are gaseous and made up of tiny particles and many planets have more than one moon.
